Shkemeruli. Chicken dish with original dressing. შქმერული Shkmeruli
Today I offer you another chicken dish, this time from chicken, with very original, delicious dressing, with its own history and exact place of origin. The dish is called Shkmeruli and it is from the most beautiful region of Georgia called Racha.
Racha is a high mountainous region with an indescribable beauty.
Shkmeruli originates from the name of the Rachin village of Shkmeri, located in the Onian region, at an altitude of 1720 m above sea level.
Shkmeruli often flashes in the menu of restaurants, and most importantly - everyone knows what it is and, even if not on the menu, can quickly make it to order, because it is prepared very quickly and easily /
The main product, as I mentioned, is chicken, which is roasted in advance and then garlic diluted in water is added to the fried meat (original recipe). But I have improved and add a lot of garlic to the cream. It turns out to be a white milk-garlic sauce. And very tasty. Some sort of garlic is added to the milk. It's all a matter of taste.
Chicken is cut into pieces, put into clay dishes called Ketsi, which is heated on charcoal and keeps warm for a long time and then poured with this sauce. In my case, I heat up the oven and put it at 180 degrees, and heat to a brown crust, from time to time I check the readiness, about 40 minutes. And when it is ready, I pour garlic cream filling, and once again for 10 minutes returned to the oven.

Cream-250g.
milk-150g
butter, creamy 50g.
sunflower oil-0.5 cups
